The quality of meat you eat can influence its flavor, texture, and nutritional value. When shopping for beef, you only want the best for your table. At Milam’s Market, we offer USDA Prime and Certified Angus Beef®. These are the best and most trusted selections available. We also offer grass-fed and Wagyu beef products.

It can get a little confusing when trying to decipher between the grades of meat you see on the shelf, so we want to give a brief explanation on what you can expect when you’re picking out the next best cut for your Saturday grilling!

USDA Prime Grade

USDA Prime Beef is the highest grade of Angus beef that is available in the U.S. the market and can be found at all Milam’s Markets locations at the meat counter. This is the beef that you will find served in fine dining restaurants or hotels in Miami. This high grade of beef is not sold in many supermarkets in South Florida- in fact, this grade of meat only accounts for 2% of beef on the market!

Prime beef is produced from well-fed, young cattle. It is characterized as having abundant marbling (the amount of fat interspersed with lean meat). Bursting with flavor and offering a tender and juice bite, this cut of meat is excellent for grilling, roasting, or broiling.

Certified Angus Beef® Brand

For beef to earn the Certified Angus Beef® brand name (CAB for short), it must undergo a rigorous screening process by the USDA. To be selected, the beef must be Angus-influenced, with a mostly solid black coat, and then pass the brand’s 10 quality standards.

The brand was developed by a group of ranchers who wanted a consistent tender and juicy steak. To do this, they select only the top two tiers of USDA Choice Grade (the grade right below prime) and all of Prime Grade cattle. These cattle must pass 10 quality standards which include: modest or high marbling, less than 1 inch fat thickness, weight limits, “A” grade maturity, and so on.

When you see the Certified Angus Beef® label on our meat packages or at the meat counter, you can be sure you will be getting an excellent quality beef.
