Divine Lemon Bars

A super tasty treat that’s perfect for an afternoon indulgence.


4 eggs
1/2 teaspoon baking powder
1/3 cup lemon juice, (fresh squeezed)
2 cups sugar
2 sticks butter, (softened)
1/2 cup powdered sugar, (plus more for dusting)
1 1/4 tablespoon lemon zest, (grated)
2 1/2 cups flour
Cooking spray


  1. Preheat oven to 350° F.
  2. Cover the inside of a large baking pan with aluminum foil. Grease foil with cooking spray. (Disregard cooking spray if using non-stick aluminum foil)
  3. Mix together butter and powered sugar. Mix until mixture is light & fluffy. Add in 2 cups of flour, beat together until well mixed.
  4. Press flour mixture into bottom of baking pan. Place in oven, bake 15-20 minutes, the top should be golden brown.
  5. While dough is baking, mix together lemon zest, sugar, lemon juice and eggs. Sift the baking powder and remaining flour into mixture. Mix all ingredients together well.
  6. Pour lemon topping mixture over the baked dough. Return baking pan to oven, bake 20-25 minutes. Check at 20 minutes for doneness.
  7. Remove from oven. Let cool completely and then dust with powered sugar and enjoy!
