Cheddar Bacon Ranch Chicken Salad Sandwiches

Serves 8 |
Perfect for lunchtime or an afternoon snack.
|1/2 cup shredded cheddar cheese|
|1/4 cup diced cooked bacon|
|1/2 cup ranch dressing|
|1/4 cup mayonnaise|
|2 tablespoons chopped fresh chives|
|4 cups chopped cooked chicken|
|8 sandwich rolls|
- Combine cheddar cheese, bacon, ranch dressing, mayonnaise, chives and chicken in a large mixing bowl. Stir together until well incorporated.
- Cover and place bowl in the refrigerator for about 2 hours to chill.
- Spoon a generous amount of chicken salad onto the bottom halves of the sandwich rolls. Place top halves of the rolls on the chicken salad to make the sandwich and enjoy!
