Easy Chicken Tortilla Soup

Serves 4 |
Hearty and oh so delicious!
|4 cups chicken stock|
|1 can diced tomatoes with juice|
|2 tablespoons lime juice|
|1 can green chiles, un-drained|
|2 tablespoons cilantro leaves, chopped|
|1 carrot, diced|
|2 green onions, chopped, green parts only|
|3/4 cup corn kernels|
|1 cup chopped cooked chicken|
|1/2 cup shredded Monterey Jack cheese|
|Tortilla chips, for serving|
- In a large stockpot, simmer chicken stock with tomatoes, lime juice, green chiles, cilantro, carrot, green onions and corn for 45 minutes.
- Add cooked chicken about 5 minutes before done.
- Serve soup in bowls topped with shredded cheese and crushed tortilla chips.
