Serves 4 | 

Makes for one fantastic appetizer.


1 1/2 lb ground beef
1/2 cup Asian peanut sauce
1/2 cup hoisin sauce
1/2 cup shredded carrot
1 cucumber, chopped
1/4 cup fresh mint leaves, torn
12 Boston lettuce leaves
Ground black pepper, to taste
Salt, to taste


  1. In a large nonstick skillet, brown ground beef over medium heat 8-10 minutes or until beef is fully cooked and no longer pink, breaking up the beef into small crumbles as it cooks.
  2. Pour off the drippings and stir in peanut sauce and hoisin sauce; heat through.
  3. Add shredded carrot, cucumber and torn mint just before serving, tossing gently, then season with salt and pepper.
  4. Serve mixture in lettuce leaves and garnish with mint, if desired.
