Beef Lettuce Wraps





Serves 4 |
Makes for one fantastic appetizer.
Ingredients:
1 1/2 lb ground beef |
1/2 cup Asian peanut sauce |
1/2 cup hoisin sauce |
1/2 cup shredded carrot |
1 cucumber, chopped |
1/4 cup fresh mint leaves, torn |
12 Boston lettuce leaves |
Ground black pepper, to taste |
Salt, to taste |
Directions:
- In a large nonstick skillet, brown ground beef over medium heat 8-10 minutes or until beef is fully cooked and no longer pink, breaking up the beef into small crumbles as it cooks.
- Pour off the drippings and stir in peanut sauce and hoisin sauce; heat through.
- Add shredded carrot, cucumber and torn mint just before serving, tossing gently, then season with salt and pepper.
- Serve mixture in lettuce leaves and garnish with mint, if desired.
