Basil Pesto Meatloaf

Serves 6 | 

Simple ingredients create a sophisticated meal.


4 slices bread, crusts removed
1/3 cup prepared basil pesto sauce
2 eggs, lightly beaten
1 1/2 lb ground beef
1 teaspoon salt
1/2 teaspoon ground black pepper


  1. Place crustless bread into a food processor and pulse until fine breadcrumbs form. Set aside.
  2. Heat oven to 350° F.
  3. Pour breadcrumbs into a mixing bowl. Add basil pesto sauce, eggs, ground beef, salt and pepper to the breadcrumbs. Mix together thoroughly.
  4. Spoon into a small loaf pan and press into the edges. Place loaf pan in the oven and bake for 75 minutes.
  5. Remove from oven and let stand 10 minutes before serving.
  6. Cut into 6 slices and enjoy!
