Fish and Shrimp Seafood Stew

Serves 6 |
A medley of seafood favorites.
|16 shrimp, peeled and deveined|
|1 cup clam juice|
|4 cloves garlic, crushed|
|1 lb fish fillets, cut into small chunks|
|1/2 cup dry white wine|
|1/3 cup extra-virgin olive oil|
|1/2 basil leaves, finely shredded|
|6 tomatoes, peeled and seeded|
|16 sea scallops|
- Heat oil in Dutch oven. Drop in garlic and saute on low heat for 2 minutes.
- Pour in wine and clam juice then add tomatoes, simmer for 10 minutes.
- Once liquids are simmering, add in fish, shrimp and scallops. Simmer additional 5-7 minutes. Stir in basil leaves and dish up soon afterward.
